  • 2 salmon fillets
  • Salt and pepper
  • 1 tablespoon miso paste (white or yellow)
  • 1 tablespoon honey (or maple syrup)
  • 2 teaspoons soy sauce
  • 1 teaspoon rice vinegar 
  • 1 teaspoon olive oil or sesame oil

  1. Pat the salmon dry and season lightly with salt and pepper.
  2. In a small bowl, mix miso paste, honey, soy sauce, vinegar, and oil until smooth.
  3. Spread a thin layer of glaze over the top of the salmon.
  4. Heat a skillet over medium heat and add a little oil.
  5. Place salmon skin-side down and cook for 4-5 minutes without moving.
  6. Transfer to the oven and broil for 2–4 minutes, until the glaze is caramelized and slightly charred.
  7. Remove and let rest briefly before serving.
