In a bowl, combine ground chicken, garlic, ginger, green onion, soy sauce, fish sauce, sesame oil, breadcrumbs, and egg. Mix gently and form into small meatballs.
Heat oil in a large pan or Dutch oven over medium heat. Brown the meatballs on all sides (about 5–7 minutes). Remove and set aside.
In the same pan, add a little oil if needed and stir in the red curry paste. Cook for 1–2 minutes until fragrant.
Pour in coconut milk and chicken broth. Stir until smooth, then add fish sauce and brown sugar.
Add sliced carrots and let simmer for 5–6 minutes to soften.
Add broccoli and return meatballs to the pan. Simmer for another 5–7 minutes until everything is cooked through and the sauce thickens slightly.
Turn off heat and stir in fresh lime juice. Taste and adjust seasoning if needed.
