I use this for roasting—it cooks evenly and cleans up easily.
Preheat your oven to 400°F.
Scrub and wash the sweet potatoes, then slice them in half lengthwise.
Drizzle with olive oil and sprinkle with salt. Place cut side up on a baking sheet.
Roast for 25–30 minutes, flip, then roast another 10 minutes until fork-tender.
Mix the Greek yogurt and chipotle sauce until smooth. Set aside.
Prep toppings so everything is ready to go.
Heat a pan over medium-high heat.
Add ground meat and let it cook undisturbed for 2–3 minutes to develop a sear.
Flip, cook another 2 minutes, then break it up and cook through.
Drain excess fat if needed.
Add taco seasoning and water, then simmer until thickened.
