Chipotle Lime Chicken Thighs

Ingredients

  • 1–1.5 lbs boneless, skinless chicken thighs
  • 2–3 chipotle peppers in adobo + 1 tbsp adobo sauce
  • 2 tbsp fresh lime juice
  • 1 tbsp honey
  • 2 tbsp olive oil
  • 3 cloves garlic, pressed or finely minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • ½ tsp dried oregano
  • ¾–1 tsp salt (start lower if using soy sauce)
  • ¼ tsp black pepper
  • 1 tsp soy sauce
  • 1 tsp apple cider vinegar

Instructions

  1. Make the marinade: In a bowl, combine chipotle peppers, adobo sauce, lime juice, honey, olive oil, garlic, cumin, smoked paprika, oregano, salt, pepper, soy sauce, and apple cider vinegar. Mix until smooth.
  2. Marinate the chicken: Add chicken thighs and toss to fully coat. Cover and refrigerate for at least 30 minutes, ideally 2–6 hours.
  3. Cook the chicken: Heat a skillet over medium-high heat. Add chicken and cook undisturbed for 4–6 minutes per side, until browned and cooked through.
  4. Finish: Squeeze fresh lime juice over the chicken before serving for extra brightness.

  • Don’t overcrowd the pan—this helps the chicken sear instead of steam
  • Let it cook undisturbed first for better caramelization
  • Blend or finely chop the marinade for a smoother coating
